What was it with Herr Baggs counting to 20 in German in the car? Like "Yes, this will help me sell crisps!!"

And I loved the:

Herr Baggs: Hallo, ich heisse Stuart, und hier ist meine kolleague, Laura.

German chap in perfect English: Ah, you are speaking German! Excellent!

Also, they kept telling the Germans they were from "the UK" which I'm not sure would be well understood.

It's quite the opposite for me. She's handling Baggs in exactly the right way; by remaining calm, with subtle quips, and by going over his head when required.

Yeah. At that point she said there were only 2 left, the one they were taking over and a small shop.
Then after the main pitch it showed Stella and Jo pitching to the small shop, not Stu and Laura.
