I know this is supposed to be some closely guarded secret but as much as I like kfc, I can't help but think I could do it better at home.

There are times when you can almost taste the detergent the chicken is washed in :(

I know this is almost blasphemy to consider kfc as cooking :p

Anyone any ideas?
 
Do you have any of those big Indian type supermarkets near you?

My Ma gets this stuff from one where the mix already done, you put all you chicken in the bag and give it a good shake and then oven cook or drop into some hot oil.

Tastes exactly like KFC, I'll ask her what it's called.
 
Oh yes you did say that sorry my bad .... I must admit the last couple of times ive been I didn't enjoy it either would like to try making some at home with the bf but doubt we'll ever find the right spice mix.
 
The recipe I use (my kids favourite) is

Marinate the chicken pieces in a pint of milk mixed with the juice of half a lemon (buttermilk) for a few hours.

1 cup plain flour (or self raising for crispier)
2 teaspoons salt
1/2 teaspoon black pepper
1 teaspoon paprika
1/4 teaspoon cayenne pepper
1 teaspoon garlic powder
1/2 teaspoon onion powder

Roll the chicken in the flour and deep fry.

I do change it a bit as I don't really measure the quantities and sometimes I use hot paprika or I add tarragon or whatever :)

2 tablespoons potassium chloride
2 tablespoons salt
4 tablespoons msg
1/8 teaspoon garlic powder
1/3 cup bottled chicken base
5 cups water
2 fryer chickens, cut into 8 pieces
6 cups Crisco shortening
1 egg, well beaten
2 cups milk
2 cups flour
2 teaspoons ground black pepper
3 tablespoons salt
1 teaspoon msg
1/8 teaspoon garlic powder
1 dash paprika

Isn't Potassium Chloride what is used in lethal injections? :p

virtually the same as the recipe i use, but i also use some celery powder

Imo you will never get the coating exactly as kfc, even if you had their recipe.
Kfc and all chicken shops use deep fryers that are under pressure, this keeps the skin soft.
just cooking a chicken piece in a deep fat fryer, for lets say 10 mins will just make it extra crispy. thats ok if you like it like that.
i often stick them in the fryer for 2-3 mins and then transfer them to an oven for 20 mins
 
Beat an egg and put it in a dish. Make up a flour mix of about a cup of flour, a teaspoon of salt, 1/2 teaspoon of garlic powder and 1/4-1/2 teaspoon of chilli. Roll the chicken in the flour mix to lightly coat it. Dip it in the egg and roll it back in the flour. Do all the bits of chicken then dip them in the egg and flour again to thicken up the coating. Then deep fry it.

There is also cinnamon and paprika in KFC I reckon.
