make sure you buy the cheapest, crappiest chicken you can buy, the growth hormones and the chicken faeces it has been living in for the past month all add to the taste.
 
Any way to do it without a deep fat fryer or would you just have to bread them instead.

Just get a small pan, and fill it with oil. You can reuse the oil multiple times (I sieve it back into a bottle). Just be careful with the temperatures and don't throw any water on it. It's very safe if you're sensible.
 
This is pretty spot on:

'KFC' mix
1 teaspoon ground oregano
1 teaspoon chilli powder
1 teaspoon ground sage
1 teaspoon dried basil
1 teaspoon dried marjoram
1 teaspoon pepper
2 teaspoons salt
1 teaspoon paprika
1 teaspoon onion salt
1 teaspoon garlic powder
2 tablespoons Accent (MSG)

Id suggest poaching the chicken pieces first in milk for 10-15 minutes until they are cooked through. Then allow to cool, dip in milk, then dip in this mixture, then repeat (double dip) then cook the pieces in a deep fat fryer for 3-5 minutes.

Fyi - I did mine without MSG, and also found better results when the chicken has a very good covering of skin (obviously) but the boneless bits work well aswell!!

The recipe I use (my kids favourite) is

Marinate the chicken pieces in a pint of milk mixed with the juice of half a lemon (buttermilk) for a few hours.

1 cup plain flour (or self raising for crispier)
2 teaspoons salt
1/2 teaspoon black pepper
1 teaspoon paprika
1/4 teaspoon cayenne pepper
1 teaspoon garlic powder
1/2 teaspoon onion powder

Roll the chicken in the flour and deep fry.

I do change it a bit as I don't really measure the quantities and sometimes I use hot paprika or I add tarragon or whatever :)

I've used a similar set of ingredients myself - but I tend to just throw stuff in as I go along rather than it being careful and methodically done!
