Pan seared salmon, dill oil, pickled slaw.
Pigeon, beet gel, roast golden beets and a black pudding bonbon.
Charred hispi cabbage, cauliflower puree, hazelnuts and pomegranate (vegan).
Chicken liver parfait, sealed with bone marrow and sourdough.
Chantenay carrots, tamarind yoghurt, date gel and crispy curry leaves (vegan) .
Confit duck, cranberry duck jus, duck bonbon, carrot puree and charred carrot.
