December the 27th, Bin Day Eve. Or, Use-Up-Leftovers Day.

Christmas Dinner Bake
  1. Make a roux, leave it quite runny as it'll definitely thicken (can always add more milk)
  2. Add a teaspoon each of English Mustard (and adopt boxing stance), thyme, rosemary. Season to taste (loads of black pepper).
  3. Add diced turkey, ham and cook for 10-15 mins on a low heat. We want to warm the meat without it falling apart.
  4. Add carrots, and cook for another 5 mins. Then add some chopped chives.
  5. Meanwhile slice leftover spuds, stuffing balls, parsnips, whatever you've got carby to go on top.
  6. Pour the filling into an overproof dish, and arrange ball slices first.
  7. Then add spud and 'nip slices on top.
  8. Sprinkle with cheese (I used mozerella, but cheddar is probably better) and black pepper.
  9. Bake until cheese is brown.
  10. Devour.

Roasted Parsnip and Carrot Soup

  1. Chop an onion and cook covered on a low heat, soften and sweat that bad boy.
  2. Take the lid off and add a teaspoon of lazy garlic, or a couple of cloves.
  3. Add a teaspoon of caramelised onion jam for a bit of sweetness.
  4. Flip the kettle on, and make 1L of vegetable stock.
  5. Make sure your garlic doesn't burn by taking the pan off the heat. Whilst it's off chuck a teaspoon of thyme, parsley, and half a teaspoon of cumin.
  6. Stir, and let it get fragrant with the residual heat in the pan.
  7. Add the stock and return to a simmer.
  8. Meanwhile grab your 'nips and chop off any overly browned/burnt bits. This will turn the soup bitter and acrid, that's bad mm'kay.
  9. Throw 'nips and carrots into the pan and bring back to a gentle bubble.
  10. Leave for 25-30 mins like this, checking frequently.
  11. Season to taste, probably won't need a lot of salt as the stock is usually full of it. I usually just add pepper.
  12. Blend to desired consistency, split, freeze, eat, etc.

Turkey (breast and dark meat)
Slow cooked ham in Coca Cola with maple glaze
Pig in blanket
Chestnut, port, cranberry stuffing (with more sausagemeat)
Truffle Brie
Rocket
Mayo and cranberry sauce

Sandwich nirvana may have been reached with a quick hit under the grill to get the cheese melted. Goals for 2023…
