Sure, was 90% using this recipe but swapping around the chillies a little as I didn't have enough guajillo so subbed in Pasilla. I also didn't have any morita so subbed in chipotle.

Beef wise I was originally going to use a mix of short rib and brisket however rib was subbed out in my delivery with a rump joint so instead was about 1.5kg each of brisket and rump. I also cooked for about 6 hours in a slow cooker + 30 minutes at the end on pressure cooker just to make sure that brisket was going to shred nicely (which it did).

Corn tortilla is a simple recipe, makes 12 8in tortilla/tacos
250g Masa Harina flour
350-375ml luke warm water
1/2-1 tsp salt

Start with 350 ml and if the flour is a little too dry add a little more water, but only little at a time as it'll get too wet quicker than you realise, then split into 12 balls. If you don't have a tortilla press you can get pretty good results using a heavy pan and brute force to flatten the balls out, you'll want 2 bits of plastic either side to prevent sticking. I use a cut in half food bag as cling film I found can split easily and also is stickier.

Then they'll cook in a medium/high heat dry pan for about 1-2 mins per side, just pop each one on a plate with a tea towel over it to keep warm and steam. This part is important to make sure they don't dry out and are easy to fold/roll without breaking.
 
Tonight it’s Chicken Pathia, Garlic Naan with Poppadoms and Mango Chutney/Chilli Sauce to go with from the local Indian.

Usually prefer mopping it all up with the bread than having rice when it’s a meal for one :D



Usual choice is Chicken Chilli Garlic however with work tomorrow I decided to avoid that one.
