I would try that cheese, if I had a few days spare for potential bum gravy.I had a Romanian sheep cheese, no name as such as this was made in the village, that if you eat too much, you will be sick + the smell was
That said, if you manage to survive the homemade vodka, the cheese would be the lesser of two evils
I wonder how your Cabrales would compare to the Casu martzu of Italy....

This reminds me of a Rick Stein recipe from his Spain book. Monkfish and red pepper iirc. Looks lovely.

Between me and you, I added Miso to the haddock as I pan fried it, which kept the OH quiet for quite a while as she was eating it
