The **Now Eating** Thread

There's no recipe, I just add the stuffs until the dough feels right, if that makes any sense.
But, it's approx 300g very strong white bread flour, 1 egg, tbsp olive oil, tbsp butter, glug of honey, tsp salt & warm water, then lob into a bread maker/mixer to make the dough, then knock back and shape by hand, give the buns a egg wash glaze, add sesame seeds and bake for 20 minutes with ice cubes in the bottom of the oven for steam.
They taste good so I'm told.














INGREDIENTS

Buns 100g each x8
450g flour 12%
245g water
28g Butter
28g Olive oil
28g Honey
50g egg
8g yeast
9g Salt

1 Egg White + 3/4 spoon of water for the glaze
 
Basic one tonight of minted lamb chops, pot croquettes and a raspberry & red wine vinegar drizzled spinach.

Looking fantastic but why do you tease us and not show the crumb structure! :cry:


I smashed some chicken Katsu tonight but it didnt last long enough to get a photo plus i had to resort to the **** Panko i have and it didnt look good. Can anyone recommend some Panko? Preferably some with huge bready shards

Are the honey wasabi peas your own concoction? Sounds exotic. Is the wasabi very prevalent (how I like it) or a more subtle flavour?


I use paprika the recipe manager app which helps me find things I’ve liked the look of in the past. Not a free app but I love it and have been using it for years.

As for the wasabi i think it needs a bit more than the recipe calls for too make it a bit more punchy.

Looks easy enough. I think I will give that a go
