Côte Brasserie Steak tartare

Beef burger, Reblochon cheese, truffle mayonnaise, caramelised red onion, baby gem, tomato & pickles in a brioche bun with frites

3rd attempt making smashburgers, using the Bon Appetit recipe video here.

My approach:
  • Buns are Hovis burger buns.
  • 20% fat Waitrose Essential beef mince (500g split down into 8 patties. 2 patties per burger, so makes 4 burgers)
  • Cheese is american cheese slices from Waitrose
  • Mayo & ketchup sauce
  • Picked jalapenos & gherkins
  • Gently fried red onion.
Key things to do:
  • Get everything out of packets/jars etc. before cooking, lay it all out - the cooking process is very quick.
  • Smash the burgers real flat, I do this before cooking outside the pan using greaseproof paper, it's easier and means everything starts & flips at the same time.
  • When flipping the patties the first time, add the cheese between two patties and stack them - so the cheese melts in the middle.

These are unbelievably cheap to make - I reckon £2 per burger, max. And delicious & healthy too (ok maybe not that last point).
