Care to share the seasoning/marinade you used please
Diced chicken mixed with a bit of oil (I prefer groundnut oil but most other oils are fine) and the following spice blend:

2 tablespoons allspice
2 tablespoons black pepper
2 tablespoons cinnamon
2 tablespoons paprika
1 tablespoon turmeric
1 tablespoon ground coriander
1 tablespoon ground cumin
1 tablespoon cayenne pepper

I leave it to marinade for about 4-5 hours, cook on a high heat in a frying pan/wok and add a teaspoon of sugar midway through cooking.
