Spent the last 4 hours in the kitchen making big batches of soup and I'm about to reap some of the rewards of my labours. So far I've made 8 portions of spicy butternut squash soup, 5 portions of beetroot soup and 5 portions of celery soup. I'm currently simmering some chicken stock for a chicken broth which I'll make tomorrow and, once the stock pot is free, I'll be boiling up a couple of ham houghs (sadly I couldn't get smoked) for some lentil soup, also to be made tomorrow. All of the above will be frozen in 1 pint milk cartons (ideal for freezing soup) to keep me going over the winter.
While I was at it, I also had a go at jointing a chicken. I didn't need to as I was using most of it for the chicken broth but I'm embarrassed to admit, I've never done it before so I wanted to practice when it didn't matter if I cocked it up. Piece of cake really. I steamed the breasts to make chicken mayo for subs and the rest has gone into the stock pot.
I'm knackered now but still have the chicken stock and the houghs to deal with - as well as a load of washing up but, for now, I'm going to enjoy some of the beetroot soup (served with a dollop of creme fraiche, chopped chives and a slice of home-made granary bread). I'll have the chicken sub after I've finished everything else.
