I've still not got round to trying cauliflower rice and I'm not sure how I'd find it but I love aubergine. I've been meaning to try the below for a while:

Staple for me. Great volume/filler food and decent macros to boot too.

Tesco's do 3 for 2 which works out more or less on par weight/cost wise (approx 1kg) with buying an extra large cauliflower and grating it, which is the other messier alternative. Dry fry or a little 1 cal / oil and spice. That said the prepacked stuff doesn't last very long before it starts to smell and taste off, freezes fine though. Fresh cauliflower grated is fine in tupperware for 2 weeks in the fridge. :)

Can't remember the last time I actually ate rice. Would rather more potatoes :D

That chicken looks especially delicious. The broc needs to be purple sprouting though :p

I don't think the French know what purple broccoli is! Never seen it here, but I do get purple potatoes, purple carrots, yellow carrots... purple cauliflower and that weird spikey looking cauliflower. :eek:
