The **Now Eating** Thread

Did ramen again, took an actual pic this time:

This is approx, as I eyeballed it completely

Ingredients:

1 clove garlic
0.5" ginger
2x birds eye chillis
1 tea spoon sesame oil
2 spring onion
half a carrot
120g pork loin
1 egg
sesame seeds
sriracha
veg stock
dried egg noodles (medium)


Slice spring onions and carrot, and one chilli.

Medium hard boil egg for 7-8min then cool in cold water.

Whilst the egg is cooking finely dice 1 chilli, garlic and ginger. Fry at a low heat in sesame oil.

Add veg stock cube, 3-400ml water and some sriracha to the ginger/garlic/chilli and simmer for 5-6 minutes. Then put the noodles in.

Put pork loin under the grill for 3-4 mins each side, rest in tin foil. Put the noodles/broth in a bowl, remove shell from the egg, add the carrot, spring onion, chilli and egg. Thinly slice the pork loin and add that, then top with a little more sriracha and a few sesame seeds.

Struggle with chopsticks.

Frozen lamb mince, tinned chopped tomatoes, chopped onion, pasta.

+ plus a second portion for tomorrow lunch after work. :cool:

A 'short stack' - American buttermilk pancakes w/blueberries, maple syrup

(are there any restaurants/cafes in the Southern Powerhouse where you can get these ?)
 
Tonight's sous vide masterpiece is halibut in garlic, basil and lemon butter. Mixed up some butter, 2 cloves of garlic, about a tablespoon of chopped basil and the zest of about 1/4 of a lemon. Smeared half of it on the halibut steaks, vac packed and bunged in sous vide at 53°C for 20 minutes. Once it was done, took it out and crisped up the skin a bit with a blowtorch and smeared some more of the butter on it. Served with some roasted pre-packed Mediterranean style veg from Morrisons.

The best fish I've eaten in a very long time. Perfectly cooked and the butter combo flavour set it off perfectly. Definitely a dish I'll be making again.

Edit: I am lucky to have an awesome local fishmonger.
 
Tonight's dinner - baked sea bass with baked tattie, cabbage, carrot and fennel with a bit of creme fraiche.

That's cheap for a whole sea bass. I'd love that but I'm not confident with preparation, or was it all done for you?

It was quite a small fish (275g) - still cheap for that.

There wasn't really much in the way of preparation. The fish was already gutted; all I had to do was scale it, slash the sides, rub in a bit of olive oil and season; then bung a sprig of rosemary and a couple of garlic cloves in the cavity and stick it it in the oven at 200°C for 15 minutes. Nothing to it.

The only slightly faffy bit was scaling it. If you're not keen on doing that, the fishmonger will usually do it if you ask :)
