I can however also recommend the below spice mix. Shot in 500g of lamb mince, mix and form into a loaf shape then bake. Slice as thin as you can. Thats the true healthier option I suppose!

Worked late today so threw together a quick tea. The garage nearby does surprisingly good meat from a local business, egg was from our chickens, not a bad late night snack!

Roasted whole sirloin, cooked to 57c after resting. The meat there is from the centre cut that's been trimmed of fat, so there's no sear.

See how it's the exact same colour as the "perfect" mid rare steak?
