This is all new to me. For these custom models, how do you get all of the pieces needed? Are there lists online for each custom model, so you can scavenge the necessary bricks from other sets?

I believe that you can actually obtain any brick ever made directly from Lego and so you can pick up all the specialist pieces required. How you put them all together to make a Tiger tank though, that's the real question.
 
If they actually made sets like that - i.e. WW2 vehicles, I think Lego would make an absolute fortune.

I am sure that I read somewhere that it is company policy not to make any war toys as the originators did not approve.

Obviously they relaxed the rules a bit with the Star Wars sets.

I think the difference is that Star Wars didn't actually happen. Oh and a shed load of $$$. WWII Lego would be very niche.

They do a Sopwith Camel kit.

In the comments on the youtube vids, people are saying the kits are from brickmania

Legoland Haul :)

I loved the Imperial Shuttle but thought it was discontinued, not seen it on Lego.com or other stores bar Amazon (but not them directly, the affiliated stores) - Legoland had about 6 so I nabbed on XD
