The Official Pizza Discussion thread (was: Cooking Neapolitan Pizzas with the Uuni 3)

Epic. It was sunny earlier so i pulled the Ooni out of the shed for its first run of the year, sun has gone in but i'll still crack on. Luckily had a supermarket doughball frozen so got that out earlier on to defrost. Just going to go with a simple marg to blow the cobwebs out I think. Mrs is picking up some mozz and pizza sauce on her way home from work!

Was a pretty failed attempt to be honest, I think a mix of cruddy supermarket packet dough, me not letting the stone come up to temp and then putting on a bit too much sauce meant we had a sloppy middle and slightly undercooked base. haha oh well, first of many this year to get my eye in.

My sister entered a raffle for a Gozney Dome Duel Fuel oven, I entered it as I thought it would be funny if I won. I now have a Gozney pizza oven and a bundle of accessories that cost me £8 :D

First idiotic offer of £1000 in, must be an OCUK members market user.
Congrats! I had an order in for one of these when they were first released, but it ended in a bit of a farce with a 12 month backlog and people complaining of cracked tiles after a few cooks. Thought it wasn’t worth the risk of buying until they ironed out the issues. Can you give some feedback on how you’re getting on? I’ve been eyeing up the Alfa forni ovens over the last few weeks, looking to pull the trigger on something in the next month or so.

Hey. I'm sorry but I didn't actually use it. I can't justify keeping it due to how much it is worth.
Someone is actually picking it up tomorrow. They basically got all the accessories for free but it helps me out because it's taking up so much space.

I can’t comment on many comparisons as I went from one of the original Ooni ovens to the Dome and I love it.

Use it at least a few times a month for searing steak too and have started cooking quite a bit of non pizza meals in it. Works well :)

Ooni having a flash sale, 30% off various ovens.

Brand new to pizza cooking and I'm very tempted to pick up the Frya. It's £209 for the oven or £286 for the essentials bundle that comes with a cover, pizza peel, pellets and lighters.

Thoughts?

I have the Karu, which is a bit more versatile. The Fyra seems to be limited to just pellets with no easy way of managing the fuel once it's going. The Karu has that added versatility of different fuels and even an optional gas unit add-on.

If you're happy with the limitations then go for the Fyra. The bundle price is quite good in my opinion. For £40 more though you can find the Karu on a different site.

Either way, cooking with these ovens is great fun, especially when you have a decent recipe to hand. A few pages back @markthechef posted a poolish recipe. It's spot on!

I was originally set on the Fyra for two reasons - the authenticity of cooking with wood/pellets and because I prefer the look of the oven compared to the chimneyless Koda (second reason is a bit weird I know). However, after looking into the Karu, I can really see the appeal. You can cook with wood + charcoal with the option of a £90 upgrade to enable gas, rather than buying an entirely new unit.

It seems like a bit of a no brainer for £50 extra?! I can't see any downsides?

The Karu is great, I don't regret buying mine. I have lumpwood charcoal, pellets and hardwood briquettes for cooking with. Love the woodsmoke flavours over gas but I always lean towards adaptability. I don't have the gas adaptor but I like that I have the option.
The carry case is worth it and Ooni seem to price their pellets well. As for the peel and other accessories - they can be bought cheaper elsewhere easily enough.

Glad to see my thinking is the same as yours. Thank you!

I pulled the trigger and ordered this:

Ooni Karu 12 Multi-Fuel Pizza Oven
Ooni Cooking With Fire Cookbook
Ooni 12" Pizza Peel
Ooni Karu 12 Carry Cover

A grand total of £275.77 including delivery, which seems like great value considering the oven is £300 RRP.

It should arrive in the next 7-10 days, so plenty of time to buy in wood, flour and all the other good bits.

Get the poolish recipe from a few pages back in this thread and you're off to a good start!

I light my Karu with a blowtorch as I'm impatient. I also use an infrared thermometer to monitor the stone temps. It should go without saying but just in case you're tempted - don't wash the stone. Don't submerge it in water and don't use washing up liquid.

Have you got turning peel, boards and a cutter ready?

"poolish"
150 gm water
150 gm 00 Flour
3gm yeast
3gm honey
Mix everything
then keep it for 1 hour at room temperature to activate
leavened it then put it in the fridge 16 to24 hours

To make the "pizza dough"

use all the poolish
add 350 gm water
then 625 gm flour
18 gm salt
mix leave for 30mins in bowl or the bench
then the fun part
olive oil your hands and lift from the middle and make a balloon
repeat 3-4 times and the dough will form fast into a round ball oily dough then rest 15min slice then ball up

AFter much deliberation, the 30% off sales on the weekend helped me dive in at a price I'm comfortable with.

I went for the Koda 16 for obvious reasons:
- The convenience of gas
- The Mrs not liking anything with 'smokey' overtones
- Friends who've upgrade from 12" to 16" Ooni ovens obviously persuade you that having the extra room is a real benefit.

So it was Karu 12 + Gas Burner or Koda 16, similar price in the sale, I paid £315 (30% flash sale + 10% Ooni promo code) and plumped for the Koda..

It's not as good as the Karu 16 on Gas, that has a couple of advantages, but we don't know how much we'll use it etc and ~£300 is a comfortable price point for that.

I would have loved a Gozney Dome (and good job I didn't see the one above, I might have caved in for £1k!), but for a first Pizza oven, if we end up hardly using it, I'd no doubt regret it!
