Yes, I still sort of think of iPadOS as just being the same as iOS so you're right, there will be one of those as well, along with watchOS. Probably tvOS and homepodOS also

I'd have to get Parallels instead.

I haven't tried virtualising more recent versions of macOS in Parallels but you can definitely do older ones. I still have a Mojave VM on my iMac which I keep for just one specific application.
