Struggling to come up with any decent ideas based on those pictures, i could definitely include the Exeter F.C logo in there but do you have any other ideas, or better pictures, the the main part (background) of the sig?

How about using the Exeter logo along with this image. Not sure about the main background, possibly just a darkish colour (not plain though) or some other suitable colour to complement those images. Other than that, not sure exactly.

I don't know if it would be possible to include this image of my wife as well maybe or whether it would look too cluttered?

If it's just the filesize you're having trouble with make sure you're saving it under "Save for web", that compresses it a lot more and I think there's a sliding scale option within it.
