I have recently taken to purchasing the ASDA extra special sausages and it has definitely enhanced my enjoyment of my Sunday morning full English

Cheap sausages are definitely RUBBISH
 
The reason that cheap sausages have little or no gristle was the discovery of an enzyme in the 70s that turns gristle into a softer more 'meat' like consistency.

This in turn led to the foodstuff known as MRM or mechanically reclaimed meat which forms the bulk of cheap sausage fillings (well after starch, water polyphosphates and other such delicacies).

My advice - find a good local butcher and talk to them about what you want. My local buthcer in Marlborough even made up some merguez sausages from a recipie I gave him. Top quality !
 
We have a pub/restaurant here in Wycombe called The Sausage Tree. A load of us went there for our housemate's birthday about a month ago, really really nice sausauges in there. Put the name into Google and you'll be able to see the menu on their website, they do over 50 varieties or something.

Unfortunately there are 5 or 6 adults in my house and dear Butchers sausages wouldn't last 2 seconds.
 
Being a wannabe connoisseur of sausages I'm trying to better a sausage I had in a sandwich some 10 years ago, but am failing.

....

Is there a superior sausage out there?

They make the best sausages and pork pies I've ever had in my life, and I make a point of finding award winning butchers when I visit the nicer parts of the country.

If your in the area pay them a visit, you won't regret it. I think their best sausage is the ginger and someit. If they have an beef pies hot out of the oven get a few, they're divine hot and fresh.
 
apart from local Dale's butchers i seem to remember the "black farmer" finest range were rather superb. can be bought in lots of supermarkets i think.
 
Funny this thread popping up. I was thinking of sausages and Butchers today for some reason. Maybe cos im fed up with my current job and thinking of maybe starting my own Butchers shop up somewhere. Obviously after some research of course..

Some years ago I used to make some awsome sausages. Best in Derby according to lots and LOTS of people.
 
Why does everyone mention 'gristle' I never had and of this in any sausage I have ever eaten. Cheap or top ones. Very strange.

This 'crud stuff'? I presume the things like trotter meat, off cuts etc.. If so, that/they are the better tasting meat of any animal. A nice sausage made from a pigs shoulder will taste better than one made from a leg.

Or the wild boar sausages from the farm shop in the middle of the Jura. sublime.

The gristle is not noticible because it is checmiallz treated to convert it into a softer fatty subtance which can be blended with the other starch, whey powder, proteins, MSG, and such like impurities that make up a majority of cheap 'sausages'.
 
Tesco value 8pck slapped on a george foreman is all i ask for, mmmmmmmmmmmm.

Meh wouldn't even touch standard tesco sausages now, the finest/taste the difference etc are so much better it's untrue. They're usually on some sort of multibuy as well and cheap compared to other meats such as beef and lamb steaks/chops etc.
