Turkey Alternatives

I've always wondered about multi-bird roasts - does it make sense to skin the birds (on the inside) when constructing? I would've thought any skin that isn't nicely crisped up by being on the outside would kind of suck.
 
Turkey and gammon for us this year.

Last year we had a 3 bird roast that was absolutely lovely.

Was looking at a goose for this year but price put us off as it seemed very expensive for its size.
