Ultimate Burger!

Had some decent pub cheese and bacon burgers with a sprinkling of tommy sauce in my time. Lightly charred bun with some juicy meat, lean bacon and gooey cheese.
 
The cheese is there for meltiness and texture, not overpowering cheese taste. Cheap american cheese slices melt perfectly for the job. Also ciabatta is totally the wrong bread for a burger, it's far too firm. Americans all use Martins Potato Rolls, the closest we can get here is those cheap Warburtons sandwich rolls. The key aspect of the burger is the beef (which should be predominately ground chuck, sometimes with other fattier cuts added for juiciness), everything else is just there to carry it.

This is absolutely correct!

I went years of using "proper" cheese in my burgers, thinking I was doing a service to burger making by using stilton and good quality chedder. It was damn tasty, but it was also damn cheesy.

What I tried recently, is using some cheap "cheese" slices. Basically they're almost flavourless, but what you get when you add them to the burger, by melting them for a 30 seconds on top is a massive amount of awesome texture.
 
You could probably have the american cheese AND some cheddar or blue if you wanted more flavour.

But what I'm saying is don't discount the cheap thin slices, they're surprisingly good. :)
 
Blue Cheese, Smoked Bacon, 1 Large Musroom (same size as burger if poss)
Smoked Cheese, Bacon, Onion Rings, BBQ Sauce
Salsa, Guacamole, Jalapenos
 
Think I might have another crack at the ultimate burger tonight, am thinking beef mince, onions, chillies for the burger, topped with cheese (Leerdammer), bacon, onion rings, lettuce and jalapeno relish. And oh yes, it will be large !

It would hold, provided you don't release your grip at any point.

As soon as you put a burger down, that is when it falls apart.
 
I always make my own burgers

I use....

beef mince
chop(really fine)a small onion
1 egg
Mrs Balls chutney(South African chutney, can get it at most supermarkets)
Just a mixture of spices e.g. steak spice, chill spice, salt/pepper etc
Chorizo - also chopped up fine
Mix altogether
Take a handful of beef make them into a ball and then flatten.

I tend not to add too much to the burger after its cooked. I want to taste the meat at least.
 
I like 1/2 pound burger with bacon,egg,sauasge,kebbab meat and cheese. A sprinke of salad and lashes of cocktail sause. All in pita bread, bun aswell but it can't take it all.

Theres a place where all the drunk people go in Plymouth called Jakes.
It's ****ing disgusting but they do big burgers, including one called the even fatter ******* which is 3 1/4lb patties in a bun with bacon and a handful of cheese.

I once asked for it, with an extra patty and 2 fried eggs. Man that was a good burger, the grease was literally dripping out onto my shirt, I looked so attractive let me tell you.

This, absolutely.

Personally I take 300g of minced meat, one chopped smoked bacon rasher, 1/4 finely chopped red onion, ground garlic, ground chilli, cayenne pepper, black pepper & sea salt and turn all that into one patty.

Because of the size of the patty you can fry it on its side whilst holding it up, sealing in all the goodness. Then fry it up properly. Finish the frying with a sizable layer of medium cheddar.

Build the burger on the frying pan so the bun (cheese-baked) soaks in any "goodness" and goes slightly crispy.

Win.
