Without getting into arguments about what a vegetable is:
Roast Parsnips, properly done are to die for.
Fresh sweet young peas are wonderful
Fried mushrooms
Potato is very versatile - a chef once told me he knew of over 100 things to do with a potato - but seriously they don't taste of much do they?

I'm quite a fan of the parsnip flavours but potato's versatile nature tops the charts
Dunno, weight wise I use more potato but I find onions are more versatile.
My favourites are Fennel and Cabbage
Have to be large and crunchy though, none of those small soggy ones.
