I currently have a home cimema set up comprising projector, amps and speakers. I output video straight to the projector whilst sound goes off to the amp.

If I bought a graphics card with hdmi output, would it output both sound and video to the amp allowing the amp to do the procesing and switching? Would this mean I could ditch the external sound card I have?

It depends on the card. The 4xx0 series ATI cards do it. However for the nVidia ones you need to get a patch cable from the sound card (or motherboard sound card) to the graphics card. By patch cable I mean the ones you used to connect the CD-Rom drive to the sound card with.

Im looking at upgrading my computer and had an interest in the 4890, do any of them have an hdmi socket on the back plate, some of the pictures only seem to show dvi sockets, which i thought were unable to pass sound through.
 
with radeons (not sure about nvidia) you get a dvi->hdmi adapter, which will allow sound and picture to be sent to your home cinema. if your amp accepts hdmi input and output, then run the hdmi from the gfx to the amp, and then onto the projector and all should work :)
