Video editing software for technical training

Camtasia from TechSmith, built for the purpose you require. Not that cheap but I suppose you could aquire it by alternate means.

If it's only for a hobby i think you can make do with the trial version and put up with the watermarks in the corner of the videos. Haven't used camtasia in a long time, but iirc those were the trial limitations last time.
