VMWare ESXi 3.5 on free download

When you create VM's what is best practice for allocating cores to the VM's, is it one VM per core or can all the VM's share all the cores without any issues?
 
Unless the system really needs it then just allocate 1 CPU to a Virtual Machine.

VM Resource Scheduling then takes care of slicing up the processor time between the available cores. You aren't limited to 1 VM per available core so you can comfortably run 6-8 VM on a Quad Core.

I am running one of the HP Proliant ML110 G5's. I have a created a Windows Server 2008 VM CPU usage is low but it is eating RAM for breakfast.
