I want to get a VPN that works with the Apple TV, but am I better off getting a VPN that works on my Ubiquiti Dream Router 7 and use a policy for the ATV?

If you only want it for Apple TV just get it for that. I don’t use a vpn currently, but the last one I used was called Safeshell which is very good.
Has an app for Apple TV, iPad e.g

Not the cheapest though.

Well it would also be useful on my personal Mac from time to time too, but I’m happy to route everything on the ATV through a VPN.

I’ve not checked but presume safeshell works on Mac as well. Just looking in my expired subs I can resub at £49.99 for the year, think it’s more expensive now though as a new subscriber.
