We can't be sure that Bernard is interviewing Dolores in the same room as where we just saw the body maker. Not yet, anyway. There's nothing to say Ford doesn't have multiple secret rooms around the place.

So as a 'host', how is it that bernard has command authority over other hosts? and since he does, who else..
Umm, because Ford gave him the ability to command, as he would obviously need this to perform his role? Doesn't take much figuring out.
Oh yes, definitely, it looks very much like it's away from the main service area.
Probably because it is easier to do the special effect of an actor falling off a horse
It could also be the case the hosts are programmed not to shoot the horses as they are more expensive to repair and with the hosts AI they could hit a moving target from 100m or so if it was really needed.

Happens a lot in westerns. Take a scene where injuns on horseback are chasing after a train for example, the blokes on the train always aim for the injun. Why not shoot the horse he's riding? Firstly, it's a far larger target and secondly falling from a horse at full gallop onto hard ground can be just as effective as being hit with a bullet.

I imagine it's easier and more acceptable to get a stuntman to fall off a horse and go "argh" than to get a horse to fall over and go "neiargh".

I know the lines are blurred somewhat by the fact we are talking about sci fi show about a leisure park on (possibly) another planet with artificial hosts playing native Americans, but...
you do know that's very derogatory choice of word, right?

I thought I was analytical but sheesh, are you guys picking up so much after just one viewing of each episode? Surely not?
Is Dolores completely off script now? If so, why hasn't this been noticed?
Is there any indication of how long a story can go on for?
I can see what people mean by timelines because the Brothel story line has started a few times now whilst Dolores is still on the same campaign.

there was some talk on another forum that the flys are spy cams and the flys are every were.
but i seem to remember a line that in the future that westworld is in, they can cure any disease, fix any injures. to me that means they must be using the same tec as the hosts, so what if instead of wearing glasses or getting laser treatment to fix bad eyesight (one of the most common problems with humans) you just got new eyes printed and what if Ford can not only see thu any host eyes but any eyes based on the host tech (same for hearing)
