I also had a massive scenic Scalextric track but got bored racing on my tod so ripped it up and currently building the above 19x10 giant!

As others have said, the possibilities are pretty endless.
You could learn a language, programming, html, an instrument (apparently my Uncle learned to play the Piano when he was 55 ), write a book etc
Take up painting/drawing, model making etc.
