What to get in the Indian?

Good rice makes good hand food though, I like a bit of bread with my curry but i've gotten too used to using my hands as eating implements and breaking meat and veg with 2 fingers and a thumb is way too convenient for filling your face lmao :D

I never eat rice with Indian food. Call me weird if you like :p

I call you normal :p North Indian dishes, unless you're eating a biryani, are not meant to be eaten with rice. The vast majority of them are eaten with bread (a roti at home, which expands when you go out to naan, laccha paratha etc).

It's only South India where everything is eaten with rice. When I first came to UK, I was surprised by how everyone was eating what were supposed to be North Indian dishes with rice >_<

Chicken Makhani (serves 2)

- 1 Tin 230g tin of chopped tomatoes
- 1 teaspoon tomato puree
- 2-3 cm piece finely grated root ginger
- 2 garlic cloves, crushed
- 1-2 green chillis, deseeded (or leave them in if you like it hot! If guests don’t like spice I leave out)
- 200ml chicken stock
- 15g ground almonds
- 1 teaspoon sugar
- 200g pack of cooked chicken tikka fillets (i use tesco)
- Tikka paste (2 tablespoons)
- 1 tbsp reduced fat butter
- 1 tsp garam masala
- bunch fresh coriander

- Cook cubed chicken in a little oil and add tikka paste 4-5 minutes before done.
- Whilst chicken is cooking, place chopped tomatoes, tomato puree, ginger, garlic, chillis (if you are going to use them), chicken stock in a saucepan and briskly simmer, uncovered, for about 10 minutes, until the sauce has thickened and reduced.
- I tend to toast almonds for added flavour (2 minutes under grill)
- Stir in the ground almonds, sugar and chicken pieces, heating through slowly for about 7 minutes.
- Stir in the butter, garam masala and coriander
- Serve immediately

This also freezes really well and keeps for up to 3 months, I would tend to leave out the almonds, butter, garam masala and coriander. Alternatively you can make the sauce, freeze it and add the chicken later on.

You may spot red peppers in the pic - I tend to add them to most dishes when I don't include fresh chilli (although I do add mild chilli powder to give a little warmth with the ginger).
