Whats your favourite Indian dish?

I tried chicken tikka rogan josh for the first time last night and it has become a firm favourite. I do love a prawn puri for a starter too along with bombay aloo.

Either Lamb Biryani, Lamb Jalfrezi or Lamb Korai are my favourites, unless something on the chef's specialties takes my fancy. With either peshwari or keema naan and pilau rice.
 
I encourage you all to make these at home. Being of Indian decent (my parents emigrated to this country from India) I have eaten mainly Indian dishes as my main meals (mainly dinner) throughout my life. There is an amazing difference in quality, and selection between home made dishes and restaurant dishes. I find home made dishes are far, far superior to restaurant dishes.

I might make a FAQ with home made Indian recipes. Hopefully it'll teach you to make amazing vegetarian and meat dishes. It will also teach you how to make roti. I'm mainly familiar with dishes from the northern-western and mid regions of India.

I imagine there is a huge difference. I just buy a jar of sauce from Lloyd Grossman.
I'd make the sauces myself if it wasn't so much effort, although I've never really bothered trying since I have little time.

How quick could I make, say... A Biryani sauce?
 
It's a difficult question to answer. Most Indian dishes (sauces included) have a base, called thurka. After this base has been made, it's really entirely up to you on how much more ingredients you want to add to get to the finished product, which depends on the dish you're trying to make.

Without longing your life out with a wall of text, the quickest sauce (known as tharri) I've made is in 15/20 minutes.
