people don't just scream Pedo for no reason
They do it for various reasons. You, for example, would do it in order to cause harm to someone for your own reasons unrelated to your victim and without any reason at all to think they're actually a paedophile. In fact, you'd do it in a situation where you know for an absolute certainty that they aren't because there aren't any children involved. Although it's entirely likely that you don't even know what the word "paedophile" means. Actual knowledge rarely matters when there are witches to be hunted.

Whenever there's a witch hunt on, regardless of what the target group is, some people will falsely accuse others for their own ends. Some of them might even believe their accusations, if they're far enough gone with the witch hunting hysteria. A woman who lives alone and knows something about herblore must be a witch! Everyone knows that. There are witches all over the place!

Don't mistake my defence of my daughters as being a reason to cause harm to someone else.
You've said nothing about defending your daughter. Only about causing harm to other people and using defending her as an excuse. Perhaps you don't understand the difference.

So technically a new contract was made verbally that night.

One of the problems with verbal contracts is proving that they exist. An unrecorded and unwitnessed phone call could form a contract, but I wouldn't bet money on being able to enforce it if the other party denies that it happened. So yes, technically a contract.

He says he has done some research into trading standards and because there was no written agreement between myself and his daughter it means that there was no service provided and thus he has no reason to pay for it. (so the ipad was fixed by magic yea?)

He didn't research that very well because as someone has already said, he's wrong. :D

A contact can be verbal rather than written. The fathers letter sounds like it infers a verbal contact was in place. However the slightly wider problem is whether a minor can enter into a contract. As she was under 16 you may not be able to enforce a contract unless her parents agreed to it?

Normally a contract can't be made with a minor as classed as someone under the age of 18 unless the contract is made for "necessaries", for example, buying shoes if the person doesn't have any shoes. Now the trick here is to prove to the judge that fixing a iPad is a "necessarie" which could go both ways really in our modern world though I would say that they would rule in favour of the complainant and say that a modern 15 year old girl needs a iPad just like how a mobile phone or personal computer is pretty much needed today.
