why does bread go stale

even those the bread is kept in a wrapper in the breadbin , you look on the date it expires and you start to feel it going hard , why does it do that ?, what causes it todo that?
 
Sort of related... I've wondered what is to stop a person re-cooking pasta after it has been cooked once and dried out again. WHat's to stop someone boiling again and eating it?

I don't imagine there is such a way to re-hydrate bread though.

Yeah but Dickyb0b how does bread know how to read the date on the 'Best Before' label so it knows when to go stale? :eek:
 
They have developed a sarnie that doesnt go stale / mouldy for months which the army could use as rations. Might be worth a google if interested as they explain why it goes stale and how they stop it happening.

I have always found bread best before dates to be useless :confused:

Often bread will last a lot longer than the best before date. A bit like eggs.
