why does bread go stale

Fresh bread (i.e. not the mass produced stuff) often goes stale on the same day (well the exposed part does!). It's one of those hard facts of life.

even those the bread is kept in a wrapper in the breadbin , you look on the date it expires and you start to feel it going hard , why does it do that ?, what causes it todo that?

It just does. Go feed it the pegions, I am sure they will appreciate it.

Air / oxygen.

Put your loaf of bread in a vacuum and it'll last for a long long time. I recall someone making a vacuum container for bread somewhere along the way but it never took off.
