isnt it all down to each individual person. the whole one hour thing is just an average but could take longer for each person. Plus from what I remember a traffic officer telling me once you start having more alcohol not just one it takes longer thus putting the hour timing out the window
 
You only count the hours after you stop drinking, while you're drinking your body isn't getting rid of any alcohol.



Yes it is. But this is offset by the fact that it is being replaced by new alcohol entering the bloodstream - the two processes run together. After you stop drinking, elimination and absorption continue for about twenty minutes until absorption stops, whilst elimination continues as before until all alcohol is gone.


And for whoever suggested drinking water: that has no effect on either rate. Eating food affects absorption, but not elimination.
