Work colleague has access to my outlook inbox

If he's not that IT savvy he properly won't know how to add another mailbox to his Outlook so he won't be seeing any of your emails.

Just raise a ticket with IT, and speak to HR if you must. No one other than IT or yourself will have been able to access your Outlook profile to add his permissions to your mailbox. Unless you've left your PC unlocked.
 
My emails are monitored but I don't care, it's their system used for communication within the business so why assume it has to be private and why think you have any right to privacy?
 
as already said you should treat your works email only for work, assume anything sent and received can be viewed by anyone.

at my works ALL incoming and outgoing email are monitored and read by hr

Actively read by HR? Really? Or only when required?
 
Our place of work is entirely opposite we are all happy to share emails ect

Everyone has the option to have them made private but opted not to. Hope you have your personal preference respected though
