Although she would probably have a case that could be fought, does she really want to go through the stresses that will surely come with it? Also the workplace is clearly not professionally run so does she really need to work with idiots, who will have axes to grind, and, as you say, she could get another job easily.

its something they'd been doing forever apprently "You can only leave when we tell you to, not when your contracted hours are finished". I basically told them they were in the wrong and when i started walking out after my shift finished and they tried to confront me I just smiled and said "I'm not having this argument again". Almost took it to HR.
