Get a few collecting professions. I'm sure you also get xp from mining/herbing/skinning now (which although only a small amount is all free xp to what it used to be)
I personally when I started my old characters was to grab both mining and herbalism, and then switch one (or both) to a crafting profession when you get to your max level. If your a leather wearing class then leather working looks strong at the moment, so take 2 of the 3 (herb/mine/skin) that you think you might use the things that you collect on your way up to 85.
Failing that, sell what you collect and make your mind up later on in the game as to what professions, as these choices are sometimes determined by what you like doing best in the game, professions for arena and pvp for example may be different to pve raiding.
Either way, 2 collection professions when levelling are the way to go IMHO.
