Your one store cupboard 'must have'?

Tabasco. I stick it in everything to add some background heat and tang.

I've got other chilli sauces, but use Tabasco the most.
 
Encona Hot pepper sauce, livens anything up even sardines on toast are exquisite with a dash mixed in.
 
If I had to, then i'd choose my mortar and pestle, there's not much doesn't get ground in my kitchen - chilli flakes, garlic, pepper etc
