Oh and special mention goes to Flatout: UC for having This Is menace on the soundtrack. One of my favorite bands that no-one has ever heard of. Couldn't believe it when they came on!
I liked the Quake 2 instrumental rock songs. Not sure if NiN did them are not. Morrowind had a great soundtrack too which has been mentioned. Half Life 2 is really good, music suits the battle sequences nicely.
GTA has a pretty cool soundtrack - I've got the limited edition box set which comes with a seperate audio cd!
Call of Duty has a good orchestral score.
Deus Ex 2 has some good stuff going on - I'm one of the few that prefers the title music to the original game. The NG resonance thing works pretty well too.
I've also got a soft spot for Unreal, as it was the first FPS I can remember playing where the music tempo changed depending on the situation - i.e. you are exploring to some gentle tones, then a Skaarj jumps down from the rafters and you are suddenly hit with some some fast-paced fight music
I thought Bioshock was worth a mention here. I only played the demo but the score in the background was sounding quality. KOTOR would have to be there along with Homeworld - Cataclysm
