I'm quite partial to Newton Faulkner's cover of Teardrop, even though it's not a patch on the original.

Another shout for Jimi's version of All Along The Watchtower - even Dylan had high praise for it:

I also like Radiohead - The Headmaster Ritual, which is originally done by The Smiths.

China Drum did a great version of Wuthering Heights.
Disturbed - Land of Confusion
Slayer - In a Gadda Da Vida
Cradle of Filth - Those Who Died, Black Metal, Devil Woman and many others
oh and Hounds of Love by the Propellerheads <-- Awesomeness!!
I think it's a superior version too. As do Snow Patrol, who change their rendition of it for live performances now.
i know for many, this is a song and a lot of people will say that this is just plain wrong, but this is by far one of the best covers i have heard, i love the way the feel of the song is changed, it's made to feel a lot more erie feeling and i found myself paying a lot more attension to the lyrics and their meaning to the original, i found the original just slightly too cheery, maybe its just me.
