don't mind spending a tad more, a tad less obviously wouldn't be a problem.

I'm going to be mainly looking at PC games based around counterstrike source, possibly WoW, COD:MW2 - So nothing to strenuous!

it will be used for general web browsing, anything you'd do when chilling out, movies/music so on quite a lot of gaming

Start with one card if it's not enough you can always pick up a second

Start with the stock cooler, as chip is cool, you can pick up a 3rd party HSF once uBer overclocks are released!

I'm looking at these two, would I be wrong in thinking the 750 would probably benefit the build more for the purpose it will hold?

For cooling, how hot will this chip run on the standard HSF if we said that it wouldn't be overclocked for a few months at which point I could then look at upgrading the HSF, so we're talking stock HSF on stock clocks.
 
I'm saying that more because of the speed of the 661 overtakes the 750, and seeming you just want to play games on it I would have seen it as a plus.

There is a review done here that compares both processors and also an AMD proc just to make your mind up whether you want an intel spec pc or to follow Waynes more price efficient setup he suggested.

Just double checked a few reviews.

Alexsandrs is correct the 661 is faster than 750 at stock speeds.

That will definitely get you on the way! Maybe a couple of case fans at some point too?

I guess you'll need to ask the man in the charge about the Club 3D cards, but definitely worth waiting for. Cheaper than the other ones and much better from what I can see!
 
Stock levels look crap for all the cheaper 5850, and it's not worth paying the extra for one of the 5850 that are in stock.
