Unless you ripped Sense out of the ROM you were using which is quite difficult, then you were still using Sense.
Launcher Pro is only a home screen and application draw replacement, you were using it instead of Sense's home screen which is known as "Rosie".
Without Sense, you wouldn't have the better camera application, better contacts application, better dialer, better email client versus the stock Android versions.
I don't get the obsession with LauncherPro, running it on top of Sense gains you nothing but visual improvements (cooler looking app draw, home screen rotation, no icons) at the cost of using more resource as Sense is running in the background still.
Running it without Sense, gives you Sense like widgets but you lose the better Sense applications.
End result - either way, running Sense on its own is the best option.
I never ran it on sense i used custom roms without sense
