Homemade butter chicken and spinach curry, made using the Spice Tailor kit (with additional chilli flakes).

Seriously good.

I like the Spice tailor kits as they give you the right amount of sauce, and also they sometimes come with a separate base sauce & finishing sauce, like this kit, which creates a good depth of flavour. Also, no bad ingredients.

When’s the first attempt? I’m keen to see the results

If I’m being honest, I’ve just had a quick small portion go at a Madras! It was beautiful, proper Takeaway consistency.

After a quick attempt there is so much I would do differently, even the book says how it does take some to judge temperatures, timings in terms of cooking out the Garlic, Spices and eventually the Paste which forms prior to adding Base Gravy.

I do plan to give this some effort and practise to the point where I can bulk make the bases and then quickly and effortlessly put together a few solid Takeaway style curries with ease.

I made a tiny portion as a tester but a small spoiler of my first quick attempt at a Paneer Madras with Naan Bread but I’m waiting for my Aluminium Pan to arrive before I document on here properly. Due 6-8th Feb :D

That looks great. When's the Pathia coming?

I find very few "ready" kits offer a decent flavour profile and are usually quite bland but Spice Tailor are really good

Saving best until last, also want to be happy with a Curry before moving on to the next.. will have a go at a couple more Madras Curry’s.

Most likely will do a Masala for my Partner and then I’ll try their Pathia Recipe & Others.

I’m hoping to be able to present a portfolio to Bollywood and ask for some of their Pathia trade secrets tbh

When is Gilbert Tandoori opening? I’ll be placing my usual order :D

Anyone willing to invest? I promise I won’t run off with all the funding and live off the grid eating Curries in the wilderness for the foreseeable future… :p

I will be sure to check what nights the Gilbert is cooking to ensure I have the best Pathia :D

I will need bigger pots to keep up with demand, I trust you will handle that aspect for me
