You'd be surprised at how well it runs for old hardware. It's finally feeling a bit too long in the tooth now with some of the new updated apps coming out. Perfect timing really as I'm happy enough with the S6 to go for it. Note 4 was nice but just too large for me.

Having the latest Android version means very little to me. Rather have a stable properly working version.
To be fair, up until lollipop the latest release of Android was the most stable and properly working version.
Google dropped the ball somewhat with 5.
I think apps are updated a good few weeks, maybe even months before the update goes OTA.
Can't say I have ever had issues with apps not working or being buggy on the newest version of android (but then I don't have many apps installed since stock android is pretty much perfect for me ). I think apps are updated a good few weeks, maybe even months before the update goes OTA.
