I think I was wrong about wine. Currently:

Is sustaining quite well. But as always with Anno, it might turn out in 2 hours that it's inefficient

4x Truffle Farms
2x Lobster Farms
2x Luxury Meal Factory
Way overproducing for 1200 Tycoon Engineers. Pretty sure only need 1x Lobster farm as well.

If you're playing Tycoons, it appears to be almost disgustingly easy to maintain eco-balance. Whilst i'm currently playing continuous game with large map, large islands, lots of raw materials etc and no enemies so I can learn the game, my main Tycoon island only drops to about -124 eco-balance (Reduces rice paddies to a mere 95%), then I get Engineer tech (3rd Tier). One is a de-acidificator which has a huge radius and covers all my coal power plus my oil/plastics chain. Then as I build my city in blocks of four houses, I replace two houses in two blocks with a recycling centre (covers roughly 30-40 houses in my layout) and my eco-balance is at a steady neutral.

As you can see, all the 'need for' buildings fit perfectly down the centre with the marketplace. Firestations can fit perfectly in the space of two houses, so it was really easy to design a smart layout. Until the Engineer building (Bottom), which doesn't fit at all, in any way, in a symetrical layout.
