Best Cheese?

Don't mind anything. Chedder for sandwiches. Parmesan for Italian food, Brie and Camembert for biscuits.

Absolutely spot on. I actually took some camembert out of the fridge literally 2 minutes ago to soften a bit for a late night snack :p

Oh, and gruyère.
 
Blue cheese = Roquefort.
Hard cheese = Leerdammer.
Cooking (macaroni cheese etc.) = Mature Scottish Cheddar.
 
Cheddar, Boursin and Halloumi are my favorite cheeses, Fetta with olive oil and balsamic vinegar is nice, mozzarella sprinkled over pasta etc. is also nice.

Brie, Camembert and the like are ok, I'm not a great fan of them but will have them, I can't stand blue cheeses, they're too strong and the mould puts me right off of the idea.

You can get mild blue cheeses. Unfortunately, I don't know the names of any as I don't eat them - bit like alcohol free beer - not much point really ;)
 
When I was a young child I used to call Brie "favourite cheese". So I guess my best cheese would have to be brie though I do prefer camembert these days.
