I always turn the volume right up for that part of the film.

Some of my favourites:

Last of the Mohicans, the part at the beginning when they are chasing the deer and at the very end, the battle on the moutainside.

The Mission, the music on the river

Lord of the Rings, all of it

Star Wars, all of it but particularly themes like Yoda's and Leia's themes.

Basically anything by John Williams.

Pirates of the Caribbean, the music from the first film, Davy Jone's theme from the second and the music as Jack is eaten by the Kraken.

Gladiator, particularly "Now We Are Free" at the end and the battle music at the beginning

Serenity, the opening theme and the "wonky" piano music throughout for River

Cinema Paradiso, the main themes

Some of Ennio Morricone's work from the Westerns

The music from Star Trek II The Wrath of Khan, particularly the part where the Reliant is closing in on the Enterprise

All I can think of off the top of my head.
 
Spy Game has a cool soundtrack 'Dinner Out' I think is the name of it.

The opening of Die Hard 3 is amazing
 
Its the Aliens Soundtrack.
Its entirely epic, even more so considering that Horner was given no time to do it in, and hadnt seen the completed film.
 
Most of the Once upon a time in america soundtrack is brilliant.

Also The Thing soundtrack is very atmospheric.

The 2 above done by Ennio Morricone.

Another brilliant soundtrack is for the movie Midnight Express by Giorgio Moroder.
