Best way to cook a rib eye steak

If it is nice and thick, sous vide for an hour at your preferred temp (53?) and then bang it on a weber chimney starter full of coals to sear it.

This do you?

Let it get to room temperature, lightly salt, plenty of pepper and a spray of oil and leave to rest for a bit... Never that strict with timing.

Put in a hot dry cast iron pan and cook one side, about half way through the second side throw in some butter and baste, if your timing is correct it will be ready just as the butter browns and before it burns. I always try to aim for medium with rib eye.

Transfer to a warm plate, pour over the brown butter, generously season with smoked salt and cover with foil to rest for about 10 min.

Do it caveman style: heat stones in a fire, remove stones from fire and cook the steak on the hot stones!

Definitely! Something about a steak cooked directly on the coals makes it taste fantastic. Although if it's thick enough I like to reverse sear it first.

These are the steaks I had for NYE..
