Tbf there wasn't really anything Newcastle could do to stop him leaving. You can't sign a pro deal until you're 17 so there's nothing stopping kids moving on if they feel the grass is greener elsewhere - you can only negotiate the best possible training fee/compensation rather than leave it to an independent tribunal to set the amount. I don't know about the last part but I don't really accept the first bit. Yes we have better players but we also have a manager that's willing to trust youngsters and that's definitely not the case everywhere. I don't think there's many managers that are bringing on 3 (4 if you count Quansah) kids in a cup final in those circumstances and today wasn't the first time either. We've seen sides with injury problems running the same 13-14 players into the ground rather than trust in youth. I can't remember if it was Klopp or Pep Lijnders who mentioned it recently but they said something along the lines of, when they look at what they need for the first team they start by looking in the academy first. Now I'm sure most managers would say the same but how often does this really happen? Just this summer Liverpool could (and in the views of 99% of supporters should) have signed another CB and RB to cover Trent and the club would have had no issue finding £15m odd to sign some average squad player but instead have trusted 2 kids from the academy that were playing in League 1 and League 2 last season. I compare that to a time when Roy Hodgson was our manager and giving away 2 of the brightest prospects at the academy just to sign Paul Konchesky.
