Cheddar making with The_blue!

Was hunting for a cheese making thread!
Are there any cheeses which can be matured a bit quicker? I'm mainly interested in making blue cheeses and don't have the patience to wait months.
Also, where would be the best place to get the materials? Equipment/ingredients?

I brew my own booze, and save a few bottles of each batch and have had some ageing for a few years now. I like the idea of having a 'vintage' night with my own beer and cheese. ;)
 
Very cool, but seems like a lot of effort for something which is probably higher quality and cheaper from the local grocery store/food market.

Does a fridge work, does it not dry it out/to cold?

what is the perfect temperature/humidity for ageing?

Also thinking is there some slow cooker or other contraption that you can set temperature on precisely for each process.
